You will need:
500g chicken mince
1 green apple, cored, peeled & grated
180g zucchini, grated
2 cloves garlic, crushed
100g quinoa, cooked
150g feta, crumbled
4 tablespoons of green herbs, finely chopped (parsley, coriander, mint)
1 tablespoon of lemon rind, finely grated
Sea salt and cracked black pepper, to taste
Olive oil, for brushing
To prepare:
Preheat the oven to 200C.
Place all ingredients (except olive oil) in a bowl and mix lightly to combine well.
Roll tablespoons of the chicken mixture into balls, and place on a lined baking tray.
Lightly brush each ball with oil and bake in the oven for 10 minutes.
Remove from the oven and roll the balls to cook on the underside.
Return to the oven for 10 minutes or until golden and cooked through.
Serve with a side of salad and a herby mayonnaise.
Note: if you’re unsure about seasoning, cook a small sample to taste and then adjust salt & pepper as needed
