
- 1 can of black beans, drained and rinsed (I prefer buying dried and soaking them for 24 hours and cook them for 2 hours)
- Small handful of cilantro, chopped
- 8 butter lettuce leaves (these make really nice cups, romaine works as well)
- Sea salt and red pepper flakes (optional)
- Mash beans and red onion together in a bowl, stir in chopped cilantro.
- Spoon into lettuce cups and top with diced avocado and a squeeze of lime juice.
- Season with salt and red pepper flakes.
