
- 300g raw couscous (about one cup)
- Gradually add hot water to the couscous while stirring with a fork until soft and then adding the olive oil gradually.
- Peel and cut the butternut into small cubes, then blanched in hot water for 30 seconds.
- Cut the feta cheese into small chunks and add to the salad.
- Finely chop the onions and peppers and add tot he salad.
- Cut the mushrooms into thin slices and add to the salad.
- Chop the chives, sprinkle into the salad and give it a good mix.
