
This simple and delicious salad serves 2
- 1 whole lettuce, thinly sliced
- Handful of cherry tomatoes
- Spring onions or red onions
- ½ small red cabbage, thinly sliced
- 1 round feta cheese, chopped
- Good sprinkle of mixed nuts & seeds (like almonds, pumpkin seeds, sunflower seeds)
- Handful of mixed herbs, chopped
- Squeeze of fresh lemon juice & olive oil
- Prepare all the ingredients.
- Toss in a salad bowl with lemon juice & olive oil.
- Serve with a protein of your choice.
