Serves 4
Ingredients:
1 head of butter lettuce
1 can wild salmon or 400g fresh, cooked(optional – for phases 1 & 3)
1 green apple, chopped
1 cup chopped purple cabbage
2 tablespoons hemp seeds
2 tablespoons sunflower seeds
Combine all ingredients in a large bowl. Dress only what you will eat with the dressing below.
Dressing ingredients:
¼ cup fresh squeezed lemon juice
2 tablespoons apple cider vinegar
2/3 cup extra virgin olive oil¼ cup cilantro, chopped 1 teaspoon pepper
Sea salt
Method:
Whisk all ingredients together and season with salt.
Pour enough onto salad to coat all the veggies.
