Gut Healing Miso Vegetable Soup

Serves 3 – 4


Ingredients for the soup:

  • Coconut oil

  • 2 x red onions

  • 2 celery stalks

  • 5ml garlic

  • 5ml ginger

  • 5ml turmeric

  • 1/2 teaspoon chilia mixture of spiral carrots or courgettes or butternut spirals, sauté for 5 minutes

  • 1 punnet shiitake mushrooms, sauté for 2 minutes


ADD:

500ml vegetable stock or water


ADD:

3 tablespoons White miso paste with some water and mix then add to the soup mixture.

Allow to cook for 10 minutes.


In the meantime:

  • 1 packet of rice noodles (soak in hot water for 5 minutes)

Last 5 minutes add in rinsed rice noodles and:

  • 1 cup broccoli florets

  • 1 cup baby spinach

  • 1 cup bean sprouts

  • Salt & Pepper

  • Chopped coriander
