Serves 3 – 4
Ingredients for the soup:
Coconut oil
2 x red onions
2 celery stalks
5ml garlic
5ml ginger
5ml turmeric
1/2 teaspoon chilia mixture of spiral carrots or courgettes or butternut spirals, sauté for 5 minutes
1 punnet shiitake mushrooms, sauté for 2 minutes
ADD:
500ml vegetable stock or water
ADD:
3 tablespoons White miso paste with some water and mix then add to the soup mixture.
Allow to cook for 10 minutes.
In the meantime:
1 packet of rice noodles (soak in hot water for 5 minutes)
Last 5 minutes add in rinsed rice noodles and:
1 cup broccoli florets
1 cup baby spinach
1 cup bean sprouts
Salt & Pepper
Chopped coriander
