Versatile Dressings


AVOCADO, BASIL & SPINACH DRESSING

 

Ingredients:

  • 2 avocados

  • 1 handful basil or coriander or both

  • 1 cup spinach, baby spinach or kale

  • ½ cup vegetable stock

  • 2 tablespoons olive oil

  • 1 lemon, squeezed

  • 2 cloves garlic

  • 1 teaspoon fresh chili

  • sea salt & black pepper

 

Method:

1.    Combine ingredients and blend well.

2.    Serve as a dressing, dip or a spread.

3.    This dressing goes well with chickpeas, quinoa, over veggies or bakes

 

TAHINI FOR EVERYTHING DRESSING

 

Ingredients:

  • 6 tablespoons Tahini

  • 3 lemons, squeezed

  • 6 tablespoons olive oil

  • 3 tablespoons maple syrup

  • 3 cloves garlic

  • 150ml cold water

  • sea salt & black pepper

OPTIONAL: fresh parsley or mint

 

Method:

1.    Combine ingredients and blend well.

2.    Serve over salads, roasted vegetables, quinoa salads, with Falafels or as a dip.
