Thai Mince Tacos

This recipe has so much flavour and can be served in a variety of ways. You can use chicken mince or pork mince, and you can serve over a salad, in tacos or even in a baked potato or a wrap.
Ingredients (Serves 2)
500g chicken or pork mince
2 teaspoons tamari
1 bunch of spring onions
2 teaspoon fish sauce (optional or add more tamari)
1 teaspoon rice vinegar
2 Tablespoons Lime Juice
1 teaspoon dried red pepper flakes
2 stalks lemongrass
1 teaspoon fresh ginger
1 teaspoon fresh chilli
A mixture of fresh coriander & mint (3/4 cup)
Method
Heat the pan, add the mince and start breaking it up so no lumps are formed.
Add tamari and keep breaking down the mince until cooked.
Add dried pepper flakes, ginger, chilli and lemon grass and stir in well.
Take off the heat and add chopped spring onions, rice vinegar, fish sauce, fresh herbs and lime juice.
Season to taste.
If serving in Tacos
Add to tacos with some avo, cheese or even a tomato salsa. Serve immediately and enjoy.
