Simple Daily Salad

This simple and delicious salad serves 2
Ingredients:
1 whole lettuce, thinly sliced
Handful of microgreens
¼ cucumber, chopped
Handful of cherry tomatoes
Spring onions or red onions
1 red pepper
½ small red cabbage, thinly sliced
1 avocado, chopped
1 round feta cheese, chopped
Good sprinkle of mixed nuts & seeds (like almonds, pumpkin seeds, sunflower seeds)
Handful of mixed herbs, chopped
Squeeze of fresh lemon juice & olive oil
Method:
Prepare all the ingredients.
Toss in a salad bowl with lemon juice & olive oil.
Serve with a protein of your choice.
