Simple Daily Salad


This simple and delicious salad serves 2


Ingredients:

  • 1 whole lettuce, thinly sliced

  • Handful of microgreens

  • ¼ cucumber, chopped

  • Handful of cherry tomatoes

  • Spring onions or red onions

  • 1 red pepper

  • ½ small red cabbage, thinly sliced

  • 1 avocado, chopped

  • 1 round feta cheese, chopped

  • Good sprinkle of mixed nuts & seeds (like almonds, pumpkin seeds, sunflower seeds)

  • Handful of mixed herbs, chopped

  • Squeeze of fresh lemon juice & olive oil

 

Method:

  1. Prepare all the ingredients.

  2. Toss in a salad bowl with lemon juice & olive oil.

  3. Serve with a protein of your choice.
