300g raw couscous (about one cup)
25ml olive oil
1 small butternut
1 red onion
1/2 yellow pepper
100g Feta Cheese
Gradually add hot water to the couscous while stirring with a fork until soft and then adding the olive oil gradually.
Peel and cut the butternut into small cubes, then blanched in hot water for 30 seconds.
Cut the feta cheese into small chunks and add to the salad.
Finely chop the onions and peppers and add tot he salad.
Cut the mushrooms into thin slices and add to the salad.
Chop the chives, sprinkle into the salad and give it a good mix.
This recipe serves 4 people.
